Car Searching

In the end of January I was in a car accident and finally found out last Monday that my beloved Mitsubishi Galant was totaled. Since then I've been driving Jay absolutely crazy with questions and beginning my car search. After searching what felt like a million dealerships, going on a thousand test drives, and a hundred opinion changes of what I thought I wanted I thought I had found my perfect car yesterday. But, between a shady dealership(if it even qualifies as that) and some poor timing, it just isn't meant to be. So I'm continuing my search and trying not to stress myself out too much. Hopefully I'll find something soon!

Are any of you car shopping right now? Have any tips for an overwhelmed, indecisive girl?

Adventures Without Power and Nemo Updates

Due to Storm Nemo I, along with the majority of my town, have been without power since Friday night. This had definitely made for an interesting weekend.

Unfortunately Jay has been out working pretty much constantly since the storm started. This has led to us probably spending a whole hour together in the last three days. Very unusual for us and definitely now my first choice on how to spend the storm but at least he's making some extra cash!

As for me, I've been spending the last few days knitting, reading, and playing card games with my family (along with plotting out where to next charge my phone of course haha). We were worried that it was going to get too cold today but lucky one of our neighbors hooked us up to his generator so now we have heat, some electricity, and are able to run our refrigerator! Feeling very lucky and grateful today.

Storm Nemo & Snow Days

If you live anywhere near New England you've been hearing about the Nemo Storm for the past few days. Predicted to drop anywhere from 10 to 30 inches of snow between tonight and tomorrow Nemo has shut down businesses, schools, and cities across Massachusetts. Normally I would be working today but because of Nemo I have a suprise snow day! (Yes they are just as fun and almost more exciting as an adult haha)

How am I spending my snow day? Knitting, catching up on episodes of Downton Abbey (watched the first episode last night and am officially hooked!), and drinking wine are at the top of my list. 

Are you in an area that is supposed to be affected by Nemo? How are you riding out the storm?

Strawberries and Cream Biscuits

Have you ever bought strawberries that looked great in the supermarket but by the time you got them home they looked a little ragged? Well I did this weekend and was trying to figure out the best way to utilize them when I stumbled upon this Strawberries and Cream Biscuits recipe from Smitten Kitchen. It's super easy and an awesome way to use up those bruised or overly ripe strawberries you have hanging around. I think it would be delicious if you switched up the fruit you used. Maybe some blueberries? Yum!



Ingredients:
2 1/4 cups all purpose flour
1 tablespoon baking powder
1/4 cup granulated sugar
1/2 teaspoon salt
6 tablespoons cold, unsalted butter
1 1/2 - 2 cups chopped strawberries (or substitute with the berry of your choice!)
1 cup heavy cream

Preheat the oven to 425 degrees and line a baking sheet with parchment paper (I always wet the baking sheet with just a few drops of water so the parchment paper doesn't move around the baking sheet)

In a bowl whisk flour, baking powder, salt and sugar together. Next grate cold butter into mixing bowl and incorporate into mixture until the flour mixture is crumbly with little pebbles of butter. Mix in strawberries until they are covered then stir in the heavy cream.

Flour your rolling surface and roll out the dough until it is about 3/4 of an inch thick. Then, using a drinking glass cut out circles from your dough. Transfer the biscuits to your baking sheet and then bake for 10-12 minutes. Serve with a cold glass of skim milk and enjoy!




Recipe makes about 20 biscuits. Enjoy!
